Example of a Traditional South African Dish
Name of Dish: Babotie
Ingredients
- 2 tablespoons vegetable oil
- 2 onions, peeled and sliced
- 2 1/4 pounds good quality lean ground beef
- 1 thickish slice of white bread
- 1 cup milk
- 1 tablespoon medium curry powder (or hot for the hale and brave)
- 1 1/2 tablespoons sugar
- 2 teaspoons salt
- freshly grated pepper (about a half teaspoon)
- 3/4 teaspoon turmeric
- 1 1/2 tablespoons malt vinegar
- 1/2 cup seedless raisins
- 2 tablespoons strong chutney
- 2 bay leaves (or fresh lemon leaves if available)
- 2 medium eggs
Method
- Preheat your oven to 350°F.
- Heat your cooking oil in the frying pan. Add diced onions, and cook over medium heat until soft.
- Add the ground beef, and cook until lightly browned. Remove from heat.
- Soak a slice of white bread in half a cup of milk for 10 minutes. Squeeze out the excess milk and mash the softened bread with a fork. Don't discard the milk! Add the squeezed milk back into your original cup of milk, and set aside.
- Add the softened bread to your ground meat mixture.
- Add 1 Tbs curry, 1 ½ Tbs sugar, 2 tsp salt, ½ tsp pepper, ¾ tsp turmeric, 1 ½ Tbs malt vinegar, ½ cup raisins, and 3 Tbs chutney to the ground meat mixture.
- Transfer the ground meat mixture into a greased casserole or baking dish, press down, and lay bay leaves on top.
- Bake for 30 minutes, and remove from the oven. Discard bay leaves.
- Beat 6 eggs with the remaining milk (for at least 30 seconds). Pour this mixture on top of the ground meat.
- Return to the oven for an additional 15-20 minutes, or until the egg topping is set.
- Serve with yellow rice and extra chutney. Makes 4-6 servings.
