Example of a Traditional South African Dish

Name of Dish:  Babotie

Ingredients
  • 2 tablespoons vegetable oil
  • 2 onions, peeled and sliced
  • 2 1/4 pounds good quality lean ground beef
  • 1 thickish slice of white bread
  • 1 cup milk
  • 1 tablespoon medium curry powder (or hot for the hale and brave)
  • 1 1/2 tablespoons sugar
  • 2 teaspoons salt
  • freshly grated pepper (about a half teaspoon)
  • 3/4 teaspoon turmeric
  • 1 1/2 tablespoons malt vinegar
  • 1/2 cup seedless raisins
  • 2 tablespoons strong chutney
  • 2 bay leaves (or fresh lemon leaves if available)
  • 2 medium eggs

Method
  1. Preheat your oven to 350°F.
  2. Heat your cooking oil in the frying pan. Add diced onions, and cook over medium heat until soft.
  3. Add the ground beef, and cook until lightly browned. Remove from heat.
  4. Soak a slice of white bread in half a cup of milk for 10 minutes. Squeeze out the excess milk and mash the softened bread with a fork. Don't discard the milk! Add the squeezed milk back into your original cup of milk, and set aside.
  5. Add the softened bread to your ground meat mixture.
  6. Add 1 Tbs curry, 1 ½ Tbs sugar, 2 tsp salt, ½ tsp pepper, ¾ tsp turmeric, 1 ½ Tbs malt vinegar, ½ cup raisins, and 3 Tbs chutney to the ground meat mixture.
  7. Transfer the ground meat mixture into a greased casserole or baking dish, press down, and lay bay leaves on top.
  8. Bake for 30 minutes, and remove from the oven. Discard bay leaves.
  9. Beat 6 eggs with the remaining milk (for at least 30 seconds). Pour this mixture on top of the ground meat.
  10. Return to the oven for an additional 15-20 minutes, or until the egg topping is set.
  11. Serve with yellow rice and extra chutney. Makes 4-6 servings.
